GEA FreshPasta Former 1 T540 从前一台机器接收面片，并将厚度减小到所需的尺寸。模具将按选定的形状切割面片，每次切割时喂入馅料。一个由滚花辊和叉手组成的系统将根据所需形状闭合产品。
废料切割系统将成型阶段产生的面片废料切成小块，然后将其取出。
GEA FreshPasta Former 1 T540 具有双重压片校准组件，第二个配有中央厚度控制功能，并且机上还配备了一个螺杆泵。意式饺子模具集成在机器中。
为不锈钢材质，由于凸轮移动组件受不锈钢盒保护，模具易于清洗。另外，这使得机器能够实现高成型速度，成型速度更高、废料更少。
此外，废料切割器被放置在一个可抽拉的托架上，以方便清洗过程。
